Heavenly Healthy Banana Bread Muffins

Last night, a friend texted to tell me that he had 3 bananas in perfect banana bread condition.  
I'm honored to know that when people see inedible brown bananas, they automatically think of me...
or I guess my ability to turn those bananas into something delicious!  
Seriously though, what a perfect opportunity to try this new whole wheat banana bread recipe I came across months ago!
  
Today the weather also decided to be a bit of a tease.
I'm talking one of those days when the temperature is absolutely blissful.  No jacket necessary.  There were people all over campus taking naps in the grass and doing their homework in the sunshine.  Our windows were all open wide to let in the cool afternoon breeze.
So obviously I took full advantage of this opportunity to turn on the oven and heat up the whole apartment....
My poor roommates.

Anyways, here you go:

Healthy Chocolate Chip Walnut Banana Bread Muffins


Ingredients:
2 cups whole wheat flour
2 eggs
1/4 c honey
1 1/2 c ripe banana, mashed (this is about 3 large-ish bananas or 4 medium-ish bananas)
1/2 t salt
1 t baking soda
1 t vanilla extract
1/2 c brown sugar
1/2 c butter, softened
 (I cut the butter down to 1/4 c and used 1/4 c of applesauce to supplement...)
1/2 c chopped walnuts (optional)
1/2 c dark chocolate chips (optional...but I promise you want to add these)

Directions:
Preheat your oven to 350 degrees.  
Place paper liners in a cupcake tin.  If you're fresh out of liners, grease the tin VERY well (these little guys are sticky!) 
Mix sugar, vanilla, soda, salt, and butter.  
Add the bananas, honey, and eggs.  Beat well.  
Mix in the flour.  
Add the chocolate and nuts if you so desire.
But really...add the chocolate and nuts.  Optional never really means optional.  
Mix well.  
Spoon into the muffin tin.  (Fill them pretty full since they do not rise as much as normal muffins.)
Bake for 21-ish minuets until set and golden around the edges.


These muffins are simply delish.  Dense from the wheat flour.  Moist from the honey.  Just enough chocolate and nuts to give them some texture.  Not too sweet.  And healthy!
