Macaroon Fever

I'm addicted.
To macaroons.



My sister first sparked my interest in macaroons a month or so ago when she brought a plate of dainty little coconut macaroons for dessert to a family dinner.
Then I tried one from Whole Foods market this weekend.
And have had macaroon fever ever since.
I whipped up a batch tonight...
and they were absolutely glorious.

Coconut Macaroons
adapted from Martha Stewart Cookies 

Ingredients:
2 egg whites
1 t. pure vanilla extract
1/3 c. sugar
2ish c. coconut flakes

Directions:
Whip the egg whites and vanilla until soft, fluffy peaks appear.


Gradually add sugar, making sure to whip everything together well.
Fold in coconut flakes.



Shape into little balls and place on cookie sheet lined in parchment paper.
(This is very important as these little guys are very sticky!)
Bake at 325 degrees for about 20 minuets.
They should turn a golden caramel color with a firm bottom.
Allow them to cool completely and remove from parchment paper.



Die from pure delight as you bite into one of these little pieces of coconutty goodness.
Next time, I want to try them drizzled in dark chocolate.
Tomorrow perhaps? 
I'm sure they'll all be gone by then!
