i love new recipes

Fun fact: I have a major weak spot for curry.
 I was blog stalking this week and happened across a most delicious looking recipe.
Lets be real,
anything that even mentions the word curry instantly catches my attention.
And i amazingly had every ingredient on hand!
I love having time to cook
and especially love trying new recipes!
Since I have been so swamped this semester (aka no time for cooking),
I thought it was about time to take a moment to myself
and try it out.
So tasty!

*Warning: Curries aren't always the most beautiful dishes, but they ARE the most tasty!

Curried Lentil Soup
(adapted from recipe at Bon Appetit)

Ingredients:
3 tbsp olive oil, divided
1 medium onion, chopped
6 baby carrots, chopped
2 large cloves garlic, minced and divided
3 tbsp curry powder
1 c lentils
4 1/4 c water, divided
1 can chickpeas, drained and rinsed
Juice from one lemon (3-4 tbsp), divided
2 tbsp butter
2 tsp salt
1 tsp ground black pepper
2 green onions, chopped 

Directions:
Heat a tablespoon of oil on medium heat. Add the onions and carrots and cook until onions are translucent.
Add the garlic and cook until all the veggies are tender.
Add 3 tablespoons of curry powder, mixing until veggies and the delicious curry aroma is very apparent (a minuet or so).
Add lentils and 4 cups of water.
Bring to boil, and then reduce heat to simmer.
Cook about half an hour, until the lentils are tender.

Meanwhile,
blend chickpeas, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1/4 cup of water, and the rest of the garlic in a blender.

Add chickpea mixture, butter, and the rest of the lemon juice to the soup soup.
Add salt, pepper, and a dash of extra curry powder (if needed).

Divide among bowls (just one in my case)
top with green onions
and serve with a lemon wedge.
